Recipe: Coconut, cherry and chocolate traybake

In honour of both our new Cherry and Coconut infusion and picnic season, this traybake is super easy- using only five ingredients!- and  basically a bit like a glorified macaroon (not a macaron, those little French delicacies). This is a recipe originally featured on BBC Good Food, but we've added a few little suggestions that might help make these even easier.

Ingredients:

200g white chocolate- the original recipe calls for a bar of chocolate, roughly chopped, although this is very messy. You might choose to go with chocolate chips. Also this recipe would work very well if you substituted the white chocolate with milk or dark (especially the latter if you choose to use sour cherries instead of glace... yum!)

200g desiccated coconut

2 eggs, beaten

85g glace cherries, halved

85g caster sugar

Method:

-Preheat oven to 180/160 fan/gas 4

- Line a baking tray with greaseproof paper (I'd also grease the sides if there are bits not covered by your paper. I used my usual brownie tray for this recipe.

- Mix all your ingredients in a bowl, making sure that they are well combined. (I told you this recipe was simple!)

- Pour into tray and bake for about 15-20 minutes, until golden brown

- Cool in tin for about 10 minutes, before cutting into slices. Let it cool a bit longer before turning the slices onto a wire tray because they can be a bit crumbly.

- Pop the kettle on and enjoy!

Hi, just baked the Coconut, Cherry and Chocolate tray bake. Mmmmm, yummy.
It’s easy to bake too. We’re going to try it warm with custard later too.

It went lovely with my cup of tea and my husband said it went perfectly with his mug of tugboat coffee too.
