Very mild coffee

When I received my Monsoon malabar beans, I was suprised at the pale colour of the beans. I am used to dark, shiny beans from my usual supplier so I wasn't sure what to expect. Made my coffee in the usual way and was somewhat disappointed by its lack of body. Maybe I need to change the brewing technique... Expectation is 80% of perceived taste, I suspect. I have changed back to another coffee available on supermarket shelf until I find a solution to this.

It sounds like you’ve encountered the unique personality of the Monsoon Malabar! You hit the nail on the head regarding expectations—this coffee is a bit of a 'rebel' compared to standard dark roasts.
Here is a breakdown of why those beans look and taste different, along with a few tips to help you get the most out of them:
The Pale Colour: Unlike most beans that turn dark and oily through heavy roasting, Monsoon Malabar gets its pale, straw-like colour from the 'monsooning' process. The beans are exposed to moisture-laden winds for months, which causes them to swell and lose density. Even when roasted, they rarely look 'dark and shiny.'
The Body & Taste: This coffee is famous for being exceptionally low in acidity with a mellow, earthy, and spicy profile. Because it’s less dense than other beans, it can feel 'thinner' or lack that punchy 'body' if brewed with your standard ratio.
Brewing Tip: Since these beans are more porous, try increasing your coffee-to-water ratio (use a bit more coffee than usual) or slightly fining up your grind. This can help extract more of those heavy, syrupy notes you might be missing.
It’s definitely an acquired taste and worlds away from a classic supermarket roast, but it’s a favourite for those who love a smooth, 'soft' cup.
Would you like some specific grind recommendations based on the brew method you're using?

Sara

Perfect

I always consider the custom house blend to be my go to coffee, and when I try the others, I think they are never quite as good. But actually this one is. It’s a different style but it’s just as good.
