Simple tea bread recipe

We know a lot of people are baking right now- and that it's not always easy to find all the ingredients you need. However, this easy (vegan!) four ingredient tea bread is a cinch to make and is delicious toasted, spread with butter. You can also experiment with the tea you use, as any black tea will work: we used Masala Chai here for a gentle spiciness, but using Household Tea will make a more traditional tea bread; using Earl Grey will produce a lighter bread (I'd be tempted to add a gentle grating of lemon or orange zest to the recipe...) Have fun!

Ingredients

300g self-raising flour (can't find this? Add 2 teaspoons of baking powder to every 150g plain flour.)
150g caster sugar (if you can't find this, you can use granulated sugar- either whizz it briefly in a blender or make sure you stir the sugar in really well)
150g raisins or dry fruit
2 teaspoons of your chosen tea, brewed strongly in 300ml of boiling water

Method
1. Make the tea and allow it to cool. 
2. Once the tea has cooled, put the raisins and tea in a bowl and allow to soak for at least an hour. 
3. Pre-heat the oven to 180 degrees and line a loaf tin.
4. Mix the dry ingredients and slowly pour the tea and raisins in, stirring as you go. Stir until all ingredients are well mixed.
5. Pour in loaf tin and bake for 40-45 minutes, until a knife or skewer comes out clean. 
6. Rest in tin out of the oven for ten minutes and then cool on wire rack.
