Simple summer cooling treat of loveliness in a glass!
150g caster sugar 4 heaped teaspoons lemon fruit infusion 4 big juicy lemons, juice and grated zest 450ml soda water or lemonade
Place the sugar, lemon fruit infusion, lemon zest and juice, in a pan with 150ml of water. Heat gently, stirring until the sugar dissolves, then simmer gently for five minutes.
Allow to cool. Strain the liquid into a container and add the the soda water. Transfer to the freezer for at least two hours, give it a little whisk every 30 minutes or so to stop crystals forming. Serves 4 glasses.
